INGREDIENTS:
¼ cup chia seeds
1 cup almond milk
2 tbsp honey
1 tsp vanilla extract
1 cup granola
1 cups mandarin segments
1 cup greek yogurt, low fat
Honey, optional for drizzling
INSTRUCTIONS:
- In a medium bowl whisk together chia seeds, almond milk, honey and vanilla extract until just combined. Cover the bowl and place in the refrigerator overnight or at least a couple of hours. Stir mixture before serving into the parfaits.
- Evenly distribute a layer of granola, mandarin segments, chia pudding and greek yogurt into three separate glasses or mason jars. Top the top layer with more mandarins and a drizzle of honey if desired
